1 pound Lasagna noodles
salad oil
1 pound mozzarella, grated
4 oz parmesan cheese, grated

2 cups broccoli florets
2 cups zucchini, 2" chunks
1 pound scallops
1 pound shrimp (shelled and deveined)
1 pound fresh mahi mahi fillets (sliced 1/4 in thick)
1 pound salmon fillets (sliced 1/4 in thick)

Cheese Filling:
4 eggs
1 pound ricotta cheese
2 Tbsp minced fresh dill
2 Tbsp minced fresh parsley
salt and pepper to taste

Poaching Liquid: Makes 7 cups.
1 tsp minced fresh ginger
4 cups water
2 cups white wine
1 cup each diced carrots, celery, onions
1 lemon, juiced
1 tsp salt
1/2 tsp pepper

White Sauce:
1/4 cup minced onion
2 Tbsp fresh garlic, minced
1 stick of butter
6 Tbsp all purpose flour
1 quart of milk
1-2 Tbsp chicken broth powder or bouillon cube

Cook lasagna noodles according to package. Rinse well, mix with enough salad oil to keep from sticking. Set aside

Poaching Vegetables & Seafood:
1. Mix together all poaching liquid ingredients, and bring to a boil
2. Blanch broccoli and zucchini in poaching liquid for 30 seconds, then plunge in ice water.
3. Poach seafood (scallops/shrimp) and fish (mahi mahi/salmon) in poaching liquid for 2 minutes. Remove and plunge in ice water. Alternatively, you can microwave seafood and fish for 1 minute, and cool in ice water.

Cheese filling Preparation:
1. Beat eggs and blend well with Ricotta cheese.
2. Stir in fresh dill, fresh parsley, and add salt/pepper to taste.

White Sauce Preparation:
1. Sauté onions, garlic in 2 Tbsp of butter for 5 minutes. Set aside.
2. Melt the remaining butter. Add flour and milk and stir till thick sauce.
3. Stir in sauteed onions and garlic, and chicken broth powder or bouillon cube.
4. Add salt to taste.

Lasagna Preparation:

Preheat oven to 350º.

1. Grease a large baking dish. Spread a thin layer of white sauce on bottom.
2. Layer lasagna in this order: noodles, cheese filling, seafood/fish, white sauce, mozzarella and parmesan cheese.
3. For the top layer, add blanched vegetables. Cover with remaining white sauce. Sprinkle with mozzarella and parmesan cheese.
4. Cover with foil. Bake at 350º for 30-35 minutes.
5. Let stand for 30 minutes before serving

Makes 12-20 Servings.

For a lighter lasagna lunch entree, skip the fish and use shrimp and mini scallops only.

For a large group entree, use curly wide noodles instead for easier serving.

You can make everything ahead and refrigerate the night before baking. Enjoy!
