4 chicken breasts, cooked and cubed
3 hard boiled eggs, chopped
½ can cream of chicken soup
1 c. mayo
8 ounce can sliced water chestnuts
2 T. minced onions
2 T. lemon juice
½ c. toasted, slivered almonds (optional)
1 tsp salt; dash of pepper
1 c. grated cheddar cheese (for top)
3.5 ounce can fried onion rings

Directions:

Mix ingredients except for cheese and onion rings. Pour into greased casserole dish and top with cheddar cheese. Bake 30 mins in 325 degree oven. Add fried onion rings and bake additional 15 mins. May be served over hot Chinese noodles or rice.
