3/4 pound pork tenderloin cut into 6 pieces and pounded thin
2 eggs slightly beaten
2 T water
1 cup dry breadcrumbs
1 t salt
1/2 t pepper
1/4 t garlic powder
1/2 cup flour
2 T butter
2 T vegetable oil
4 T lemon juice
4T white wine
1 jar capers

Directions:
Directions:
Mix egg and water. Mix breadcrumbs, salt, pepper and garlic powder. Coat pork with flour. Dip into egg mixture. Coat with crumb mixture. Heat 1 T oil and 1 T butter in skillet over medium heat until hot. Cook pork turning once until done, about 12 minutes. I use 2 skillets in order to cook all the pork at the same time. Remove pork from skillet, stir in lemon juice and wine and heat to boiling. Add cooked pork and capers.

I always serve this with mashed potatoes and a vegetable. One of my favorite dinners.
