2 large potatoes, peeled and cubed
2 c. boiling water
1 med. onion, finely chopped
2 med. peppers, chopped (I used orange & yellow but the recipe calls for red & green)
2 Tbsp. butter
½ tsp. crushed chillies (or alternate hot chillies)
1 c. chicken broth
1 egg yolk, slightly beaten
¼ c. 2% milk
½ tsp. curry powder
1 bay leaf

Cook potatoes in water for about 15 min. until tender. Add I c. broth and blend with immersion blender or purée in processor. Sauté onion and peppers in butter on med. heat for 10 min until tender. Add to potato mixture and reheat with curry and bay leaf. Mix egg yolk and milk, then slowly add ½ c. of the hot soup. Slowly add mixture to soup and heat gently, but do not boil. Top with grated cheese if desired.
