15 SMALL RED POTATOES
1/3 CUP VINEGAR
1/2 CUP SUGAR
1/2 LB BACON
1/2 TSP PEPPER
1 TSP SALT
1/2 CUP WATER
LARGE GREEN ONION, CHOPPED
1 TBS PARSLEY, CHOPPED
2 HARD BOILED EGGS, CHOPPED

Directions:
BOIL POTATOES UNTIL TENDER. PEEL AND SLICE INTO BOWL. COVER AND KEEP WARM.
FRY BACON UNTIL CRISP AND REMOVE FROM PAN.
USING BACON DRIPPINGS, ADD VINEGAR, SUGAR, SALT, PEPPER AND WATER.
BRING TO A BOIL TO MAKE DRESSING. SPRINKLE CHOPPED ONION AND PARSLEY OVER POTATOES. ADD DRESSING AND GARNISH WITH CRUMBLED BACON AND CHOPPED EGG.
