2 boxes corn muffin mix
1 Vidalia onion
2 eggs
1 cp. cottage cheese
1 can corn, drained
1 cp. grated sharp cheddar cheese
1 stick butter, melted
1/3 cp. chopped green onions
1/4 tsp. sugar
1/2 cp. cooked, crumbled bacon

Directions:
Preheat oven to 375. Slice onion. Cook several pieces of bacon in large iron skillet, remove to cool and crumble. Place onion slices in bacon grease and sauté for about 5 min. While onions are cooking, beat eggs into muffin mixes and stir in corn, cottage cheese, melted butter and sugar. Fold in green onions, cheddar cheese and bacon bits. Pour batter over onions in skillet and bake for 30-35 min., until golden brown. Allow to cool for 10 min. before inverting onto plate. Cut into wedges and serve warm.
