1/2 c butter (1 stick)

BATTER:- do not try and double this.
1 c flour
2 c sugar, divided
1 Tb baking powder
pinch of salt
1 c milk

4 c fresh skinned, or frozen peach slices (note drained, canned peaches will work okay)
1 Tb lemon juice

Optional ground cinnamon

Preheat oven 375 degrees

1. melt butter in a 13 x 9 in. baking dish.(in oven while it is heating up)

2. combine flour, 1 CUP sugar, baking powder, salt and milk, stirring just until dry ingredients are moistened. Pour gently and evenly over the melted butter. DO NOT STIR.


Bring 1 CUP of sugar, lemon juice and peach slices to a boil (high heat), stirring constantly. Pour over batter gently and evenly as possible DO NOT STIR

If desired, sprinkle ground cinnamon on top

Bake at 375 degrees for 40 to 45 mins.until crust is golden brown

Best served warm with ice cream on top.

So quick and easy and this old fashioned cobbler gets rave reviews. Can't fail recipe. Ready in about an hour.

I freeze 4 cups peeled and sliced peaches and 1 cup sugar in freezer bags so all I have to do is partially thaw in microwave, then bring peaches to boil in a pan with added lemon juice.
