18 sheets graham crackers 10 Tbsp. butter, melted
FILLING:
3 limes (**zest from 3 limes; juice from only 2 limes) 22 oz. cream cheese, room temperature (regular, not light cream cheese) 1 3/4 cups condensed milk (from 2 cans)
TOPPING:
3/4 cup heavy cream (whipping cream) 2 Tbsp. sugar

Preheat oven to 350º F. Coat 9" springform pan with cooking spray; line bottom with round of parchment paper. In a food processor, in batches, process the graham crackers until they are finely ground. Transfer to a bowl; stir in butter. Press into the bottom and 1 1/2" up the side of the springform pan. Bake 5 - 8 minutes or until set and lightly browned. Cool completely.
FILLING:
Finely grate the **zest from 3 limes and squeeze juice from only 2 limes. In a large bowl on a medium speed, beat cream cheese until smooth, about 2 minutes. Add condensed milk, lime zest and juice; beat until smooth. Transfer to pan. Cover; refrigerate until cheesecake is set, at least 3 hours or overnight. |
