1 LB Elbow macaroni
1/2 cup Mayonaisse, ( more to taste)
1 pkg. dry Ranch dressing mix
Green, onions, fined sliced
1 pint grape tomatoes, halved
Salt, & Pepper

Directions:

1. Boil elbow macaroni according to package directions, drain, add mayonnaise and a package of powdered ranch dressing. Mix well. Add green onions and tomatoes. If you need to, you can add salt and pepper. Mix well.

Most of my Thanksgiving memories go back to Forest Park. Thanksgiving! How I miss those days of heading to Forest Park, to the green house on Glenview! When you walked up on the porch, you could smell the smells of Thanksgiving, along with the burning of the fireplace! Aunt Florence would always greet you(in a sweatshirt and tennis shoes), along with all the dogs. Aunt Ethel and Uncle Earl were always in the kitchen getting casseroles and turkeys in and out of the oven. We would all bring in our contributions to the meal and glance around to make sure no one failed to make our favorite! (Mine was Donna’s macaroni salad!). The Holiday Season always opened with Aunt Ethel’s declaration, “Let’s get everything organized” and we were off! So, to those Cole family members not here anymore-Ethel, Florence, Flora, Mother, Tommy, Leisel, Greg, and Ricky- we MISS you! And to my cousins- Joyce, Donna, Jim, John, and Rhonda- I MISS you and yours too! “Let’s get everything organized and have a very Happy Thanksgiving!” Love and kisses- see you soon!
