1 pound lean ground beef
1 1/2 cup water
1 can (14.5 oz) diced tomatoes with green chilis (Rotel)
1 (11 oz) can whole kernel corn with peppers (Mexicorn)
1 (4.4 oz) envelope Spanish Rice Mix
1 1/2 cups shredded Mexican Cheese Blend

Note; I usually can't find this size Spanish rice mix. I buy the bigger size and increase other incredients accordingly.

1. Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.
2. Add water, Rotel, corn, and rice mix; mix well. REduce heat to low; cover and cook 10 - 15 minutes or until rice is tender.
3. Stir in 1 cupo of cheese until melted. Sprinkle with remaining cheese.
