1 cup Light Karo syrup
1 cup light brown sugar
1 teaspoon salt
1 teaspoon vanilla extract
1 stick butter, melted
3 eggs; slightly beaten
2- 9 inch pie shells; frozen
1 pound pecans

Directions:

Pre-heat oven to 350 degrees
Combine first 5 ingredients and using a mixer, mix well. Add eggs and combine.
Pour batter into the two 9" pie shells. Top with lots of pecans.
Bake for about 45 minutes or so. Center of pie should be almost firm. Let cool. Do not refrigerate.

This recipe, like Rita's Carrot Cake recipe, was found in a "Dear Abby" column in the newspaper. Rita (21) and I (19) were attempting to cook the first Lusco/Moreland Thanksgiving dinner! I can't remember how the meal turned out; but, these two recipes are still being made almost 50 years later. Rita- We started a TRADITION! Love you! -Liz
