Three heirloom tomatoes sliced 1/2 to 3/4 inch thick
Two cloves garlic minced
One bunch fresh basil cut in thin strips
Two teaspoons grated Parmesan cheese
One cup grated mozzarella cheese
Two tablespoons balsamic vinegar

Directions:
Directions:
Preheat oven to 350º.
Slice tomatoes and place on a cookie sheet that has been sprayed with cooking spray.
Sprinkle each tomato slice with minced garlic and 1/2 teaspoon Parmesan cheese.
Divide and sprinkle basil evenly over the tomato slices.
Cover the tomatoes with 1-2 tablespoons of mozzarella cheese covering them completely.
Bake in oven for 40 minutes or until cheese is browned.
