1 1/2 cups heavy cream
1 cup sugar
1/2 cup brown sugar, packed
1/3 cup light corn syrup
1 tbsp unsalted butter (plus extra for greasing dish)
1 tsp salt
1 1/2 tsp vanilla extract
Sea salt, garnish

Directions:
Directions:
1.Heat a saucepan to a medium heat. Add cream, sugars and corn syrup making sure to stir constantly so the sugars don't burn.
2. Let them bubble until thick. Continue to boil for about 8 to 10 minutes until the mixture is a deep golden brown.
3. Add in the vanilla, salt and butter, whisking together until combined, then remove from heat.
4. Pour into a greased baking dish, then sprinkle sea salt over the top.
5.Let it cool completely before trying to remove it.
