2 cups sugar
1 cup light corn syrup
¼ cup butter
½ cup water
2 ½ cups raw peanuts
3 tsp baking soda
3 tsp vanilla
candy thermometer

Directions:
Directions:
1. Line 1 large baking sheet with Parchment paper and set aside
2. Butter sides and bottom of 3-quart saucepan
3. In saucepan, combine sugar, corn syrup, butter, and ½ cup of water
4. Clip candy thermometer to side of saucepan
5. Cook and stir over medium low heat to 275º, soft crack stage, approx. 30 minutes
6. Add nuts; cook and stir to 295º, hard crack stage, approx. 12 - 20 minutes
7. Remove saucepan from heat; remove thermometer
8. Quickly add vanilla and stir briskly
9. Sprinkle baking soda over mixture, stirring constantly
10. Immediately pour onto prepared baking sheets
11. Cool; break into pieces
12. Store in tightly sealed containers
