1 lb. bacon
2 large onions
1 large fistful fresh basil
2 large tomatoes, skinned and diced
2 qts. tomato juice
2 tsp baking soda
2 qts. half and half
¾ tsp fresh ground pepper

Directions:
Directions:
Dice bacon and saute in a large pot until most of the fat is rendered. Remove approx. half of bacon fat from pan.

Place the onions in the food processor and pulse until chopped. Add basil to the onions and pulse a few times until finely chopped.

Saute onion mixture in bacon/bacon fat mixture until translucent. Add diced tomatoes and continue cooking until tomatoes are beginning to soften and fall apart.

Add tomato juice and bring to a simmer, stirring often. Simmer ten minutes. Add baking soda and stir (it will foam and then die down). Slowly add cream and bring back to a simmer. Add pepper and adjust seasonings. This soup usually doesn’t need salt, but it will depend on the saltiness of the bacon and the tomato juice.
