1 egg
1/2 cp. peanut butter
3 Tbsp. honey
1 Tbsp. vanilla
1/4 tsp. baking soda
pinch salt
1/2 cp. mini semi-sweet chocolate chips

Directions:
Directions:
Preheat oven to 400. Spray mini muffin pans with cooking spray. Mix all ingredients except chocolate chips in a food processor and blend until smooth. Stir in the chips and spoon into muffin pans, using a rounded tablespoon full for each muffin. Bake for 8-9 min. until set. Allow to cool about 10 min. before removing. These can be frozen in zip-lock bags and microwaved for a quick breakfast or snack. GLUTEN-FREE..
