Dirk's Chicken Pot Pie Recipe

1/3 cup butter
1/3 cup all-purpose flour
1/2-1 tsp salt (to taste)
1/4-1/2 tsp pepper (to taste)
2 cups chicken broth (homemade is best)
1 cup whole milk
3 cups cooked chicken (I use slightly under-baked chicken breasts, that I’ve roasted with olive oil and salt and pepper, but have used shredded rotisserie chicken in a pinch)
2 slightly under-cooked and diced large gold potatoes (I dice these the same size as I cut the chicken and barely cover them with salted water. simmer until almost done. drain and set aside)
1 bag of frozen peas and carrots, thawed

1 batch of my old-fashioned pie dough*

Heat oven to 425º. Roll half of dough and lay in a dish 13x9 or a little smaller but deeper. (Since I always double or triple this, I am not certain what dish is best for one recipe's worth). Keep cold in fridge while preparing filling.

Heat butter in stockpot over medium heat until melted. Stir in flour, salt, and pepper. Constantly stir until mixture is bubbly (at least a minute or two). Stir in broth and milk. Heat to barely boiling while stirring constantly. Let barely boil about 1 minute. Stir in chicken and veggies. Turn off heat and set aside.

Pour filling into prepared dish with dough. Roll out second half of dough and lay over the top. Crimp edges and cut top with knife to vent. Bake about 35 min, until golden brown.
Serves 6, maybe? Doubles and triples well.
 

*Dirk's Old-Fashioned Pie Dough

2 1/2 cup all-purpose flour
1/2 tsp salt
¼ tsp baking powder
1 stick butter, cold and diced
8 oz shortening or lard, cold and diced
1 egg yolk
3-4 tbsp. ice cold water

Directions:
Directions:
Combine dry ingredients in bowl of food processor. Add butter and shortening to bowl and pulse repeatedly until mixture is fine and powdery with no remaining large pieces of fat. Add beaten egg yolk and 2 tbsp ice water and pulse until just combined. Add more ice water and pulse until dough just comes together. Turn dough out onto floured surface and form into two disks. Wrap or bag and refrigerate until needed, at least one hour.

The Warren Tribe is separated these days by many miles, and even oceans. But one thing is for certain, when "the gang's all here" Dirk is in the kitchen making his Chicken Pot Pie. One of the most requested family favorites, we couldn't let this book go to print without it. He and Aubrey had to sit and write it down because it's not a recipe, it's an art. This is just old fashioned home cooking at its best!!
