"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

1/2 cup Boiling water

inch of salt

3 cups flour

Directions:
Mix shortening, salt and boiling water in a large bowl. Whip with a fork until fluffy. Add the flour all at once. Stir until it leaves the side of the bowl. Roll between 2 sheets of wax paper or today we just flour our board and use it.

Makes enough for a 2 crust pie. If using for 2 once crust pies, bake at 375º oven for 10 to 12 mins. or until light brown before adding filling.

This also freezes well if made up ahead and if you like to have pie shells on hand for one crust pies.
