1/2 cup quinoa
1 cup water or broth
Zest & juice of half a lime
salt & pepper, to taste
1 1/2 cups black beans
1 ripe mango, peeled and chopped
1 avocado sliced
1 Jalepeno sliced
2 tablespoons cilantro, chopped
3 tablespoons red onion, chopped
1 tablespoon lime juice
salt and pepper, to taste
4 to 6 whole grain or gluten-free wraps

Directions:

In a small pot over high heat, combine the quinoa and broth. Cover, bring to a boil and then turn down to a simmer. Simmer for 15 minutes, remove from heat and stir in the lime juice, zest, salt and pepper. Set aside to let cool.

In a medium bowl, mix together the black beans, mango, cilantro, jalepeno and red onion. Toss with lime juice and season with salt and pepper.

Take one wrap and fill with some of the quinoa, avocado and the bean mixture, fold up and enjoy.

Serve with Salsa.
