Zucchini Cookies Recipe

2 1/4 cups flour

1 tsp baking powder

1/2 tsp salt

1 cup zucchini, grated

1 cup nuts

1/2 cup butter plus 2 tablespoons

3/4 cup white sugar

1 egg

1 tsp lemon juice

FROSTING;
1 cup icing sugar
1 1/2 tbsp lemon juice
Directions:
Directions:
Cream butter and sugar. Add egg. Add flavouring. Add sifted dry ingredients and zucchini and nuts.

Drop on greased cookie sheet. Bake 400º for 10 mins.

Mix frosting ingredients and frost when cookies are cool.

Cookies are also good without frosting.

When I first made this for my hubby he just ate a big hole in the centre of the container. He was full. When I told him they had zucchini which he hated in the cookies, he said ok for cookies. A simple man with a simple solution. OK in cookies. Gotta love this man,.
