500 g of baby leaf spinach
4 sheets of beaten filo pastry
250 g of ricotta cheese
30 g of pine nuts grazed zest of 1 lemon
1 egg

Directions:
Directions:
1. Prepare the spinach in the microwave or in boiling water for 30 seconds.
2. Make sure to drain it well, removing all the moisture.
3. After doing so, chop the spinach and mix it with the ricotta, lemon zest, one egg, and nuts. Season the mixture to your liking.
4. Divide the filo sheet into three strips.
5. Add a tablespoon of the mixture in the top corner of each of the strips.
6. Fold the strips diagonally, so that you get triangular pieces.
7. Fry for 4 minutes at 200ºC.
