1/3 cup whole wheat flour
1/3 cup yellow cornmeal
1/3 cup flour
1/2 teaspoon paprika
1 teaspoon salt
1/2 teaspoon crushed thyme
1/8 teaspoon pepper
Evaporated milk
Assorted chicken pieces (12)
6 tablespoons butter

Directions:

Mix dry ingredients thoroughly. Coat chicken pieces with evaporated milk, then roll in flour mixture.

Melt butter in 13x9 baking pan. Put chicken in pan skin side down. Bake for 25 min. at 400. Turn chicken to other side and continue baking 25 min.

Mixture makes enough to coat 4 legs, 4 thighs, and 4 breasts.

Note: If you don't have whole wheat flour on hand, just double the white flour. But don't leave out the corn meal!

Remember the old Shake and Bake Chicken packets from the 70s? And the commercial where the little girl tells her daddy, "It's Shake and Bake! And I haaaylped!" Not sure if they're still on the market, but they were exorbitantly priced packets of a few ingredients that you coated the chicken in and then baked, and it sort of simulated fried chicken. I liked the idea but thought I could do better (and cheaper), so in 1980 I experimented until I came up with this mix. The method is the same, and the ingredients can be tweaked easily!
