3 cup carrots, shredded
1 cup onion, chopped
6 tbsp butter
2 cups seasoned (Pepperidge Farm) herb stuffing
1 can (16 oz) cream of celery soup
1 cup sour cream
4 medium (8 oz) yellow squash, sliced

Directions:
Directions:
Cook squash until tender and set aside.

Cook carrots and onion in 4 tbsp. butter till tender. Stir in 1 1/2 cup stuffing, soup, and sour cream. Stir
in squash.

Pour into lightly greased 1 1/2 qt. casserole. Melt remaining butter, add rest of stuffing. Spread on top of casserole. Bake at 350º for 35 min.

Obviously, since Thanksgiving at our house usually means a crowd, this is always at least doubled. It's one of the most coveted leftovers on the following weekend.
