2 Tbsp vegetable oil
2 cups yellow onion chopped
1 cup green bell pepper chopped
1/2 cup celery chopped
1 tsp salt
1/2 tsp cayenne pepper
1 lb smoked sausage cut in half lengthwise and cross cut into 1/4 inch slices
4 bay leaves
2 cups canned or fresh tomatoes peeled, seeded and chopped
1 Tbsp garlic chopped
1 lb shrimp peeled and deveined
2 cups long grain rice
5 cups chicken broth
1/2 cup green onions chopped

Directions:
Directions:
In large Dutch oven or stock pot, heat the vegetable oil over med heat. Add onions, bell peppers and celery. Season with salt and cayenne. Cook, stirring until vegetables are wilted (about 5 minutes).
Add the sausage and cook stirring for about 2 minutes. Add bay leaves, tomatoes, garlic and shrimp. Cook for about 2 minutes.
Add rice and cook stirring for 2 minutes then add broth and bring to boil.
Reduce heat to medium/low, cover and cook until rice is tender and most of the liquid is absorbed (about 25-30 minutes)
Stir in green onions and remove bay leaves.

Serve hot.
