1 pound of large shrimp
1 c salsa
2 Tbsp taco seasoning
6 small flour tortillas
1 c shredded cheese (I used colby jack)
1 taco rack
Optional toppings: sour cream, shredded lettuce, diced tomatoes, chopped cilantro, sliced avocado

Directions:
Directions:
1. Preheat oven to 350 degrees F.
2. Cut each shrimp into 3 pieces.  In a skillet over medium heat, combine shrimp, salsa, and taco seasoning.  Cook for about 5 minutes, or until shrimp are opaque.
3. Put tortillas in the taco rack and place on a cookie sheet.  Spoon the shrimp mixture evenly between the 6 tortillas.  Sprinkle cheese on top of tacos.
4. Bake the tacos for about 7 minutes, or until cheese is melted.
5. Top with desired toppings and serve.
