7 oz jar marshmallow creme
1 lb. powdered sugar
1 tsp vanilla
3-oz jar maraschino cherries, drained & cut into small pieces
14 oz caramels
3 Tbsp. water
2 cups pecans

Combine the first 4 ingredients. Mix well with hands.

Ha ha ha! Just try mixing 1 pound of powdered sugar with a mere 7 ounces of marshmallow creme! Sounds easy, right? Go ahead, try it!

Shape into 5 4x1" logs. Chill 2-3 hours. Oh, by the way, really do chill it 2-3 hours. You'll find out why in the next step.

Combine caramels and water. Melt. Dip logs in caramel. Roll in pecans. Piece of cake. Right? In case you hadn't noticed yet, when you mix powdered sugar, marshmallow creme and cherries, the log comes out...well, flesh colored. And because there is so much powdered sugar in the tightly packed log, it's very dense. They're more like bricks than logs.


Then you dip them into the melted caramel and what happens? Powdered sugar and heat? They start melting!! QUICK!! Turn them around in the ooey, gooey sticky caramel and get them out fast! What do you mean they won't come out? They're sticking to the caramel? I tried to tell you this recipe is impossible! Quick! Grab a fork and lift from the bottom!!

Yep! Same thing happened to me! That log that was stiff as a brick is suddenly limp and nearly bending in half, ends loaded down with the weight of all that caramel. But keep going, there's no time to waste!!

Roll the caramel into the pile of nuts! NO! NOT WITH YOUR HANDS! The caramel is HOT!! Now you've scorched your fingertips! (I know because I did it, too!) Turn the log quickly and set it on waxed paper! Now go soak your fingers!

Don't worry, the caramel will remelt in no time at all over the stove. Then you get to do this again. FOUR MORE TIMES!

My mom was quite possibly the World's Best Candy Maker. That's what a lot of people said. I grew up eating Pecan Pralines, Almond Toffee, Fudge, Penuche, and Divinity as though they were commonplace in every home around the holidays. I didn't appreciate Mom's talent until I tried to make some of the recipes myself.
