1/2 large head Napa Cabbage, core removed and thinly sliced
2 pkgs Ramen noodles [oriental or sesame flavor]
3 scallions, thinly sliced
2 packets ramen spice mix
1 tsp. black pepper
4 tbsp rice vinegar
1/2 cup vegetable oil

Directions:
Directions:
Preheat oven to 400º. Break up ramen noodles into bite-size pieces. Place on a foil-lined sheetpan and bake for 8-10 minutes, until golden brown. Set aside to cool.
In a large bowl combine cabbage, scallions, and cooled ramen noodles. Mix well.
In a small mason jar with lid, combine ramen spice packets, pepper, oil and vinegar. Top with lid and shake well. Pour onto slaw mixture and combine well. Serve cold or room temperature.
