1 1/4 cups unsifted all-purpose flour
1 teaspoon baking soda
1 cup butter, softened
1/4 cup granulated sugar
3/4 cup firmly packed light brown sugar
1 pkg (4 serving size) Jello brand vanilla INSTANT pudding
2 eggs
3 1/2 cups QUICK COOKING oats
1 cup raisins
1 cup finely chopped walnuts or pecans (optional)

Preheat oven 375º. Mix flour with baking soda. In a large bowl combine butter, the sugars, and pudding. Beat until smooth and creamy. Beat in eggs. Gradually add flour mixture, then stir in instant quick oats and raisins (batter will be stiff). Drop by rounded teaspoonfuls onto greased baking sheets. Bake for 10-12 minutes. Makes about 5 dozen (less if bigger cookies are desired).
