1 c. white sugar
3/4 c. shortening
1 egg
1 c. cooked carrots, mashed and cooled
1/2 tsp. salt
1/2 tsp. lemon extract
1/2 tsp. vanilla extract
grated rind of one orange
2 c. flour
2 tsp. baking powder

Frosting:
1 1/2 c. powdered sugar
1 tbsp. butter
1/8 tsp. salt
grated rind of one orange (and juice if necessary)

Directions:
Directions:
Cream sugar and shortening. Add egg and carrots and mix well. Add salt, extracts, and rind. Mix flour and baking powder together and add to carrot mixture. Drop by teaspoons on cookie sheet, lightly greased. Bake at 375º for about 10-12 minutes. Frost while warm. For frosting, mix all ingredients together, using enough orange juice to make proper consistency for spreading as a glaze.
