2 cups cubed cooked skinless chicken breast (9 oz)
1 cup sour cream
1/4 tsp salt
1/4 tsp pepper
1/2 c vegetable oil
12 (5 inch) tortillas
1 4 oz can chopped green chiles, drained
2 cups shredded Mexican or Monterey Jack cheese (8 oz)
1 onion and 2 jalepenos (chopped and sauted are great instead of the chiles)

Saute the chopped onion and jalepeno if using, until tender crisp. Mix chicken, sour cream, salt and pepper. Add onions and jalepenos. Coul add a few dashes of cumin and chili powder if you like. Using flour tortillas, brush the outside of the tortilla with oil. Put in a large spoonful of filling and roll. Place seam side down in a sprayed glass baking dish. Sprinkle with cheeses. Could top with a can of enchilada sauce if you wanted to. Bake at 400 for 20minutes.
