1 long loaf garlic bread, cut lengthwise for this recipe
fresh garlic cloves
1 stick butter
2 to 3 tbsp olive oil
1 packet cup of Lipton tomato cup of soup
alternative to cup of soup: concentrated Campbelll tomato soup- 1/3 to 1/2 can
grated parmesan cheese
dried basil (sprinkle sparingly)
dried parsley

Directions:

melt butter in sauce pan. Press cloves through a garlic press. Use between 3 and 4 for a large loaf of bread. You may need to use additional oil and butter if you saturate. After the garlic and butter have simmered for a short while, stir in the tomato soup mix. Use a whip to make mixture stay together.
Slice the bread longitudinally. Spread the butter mix across the bread halves. sprinkle each with Parmesan cheese (grated) till both sides have the mix covered. Sprinkle with small amounts of dried basil and parsley. Put the two halves together, wrap in foil, place on a baking sheet in the oven. Bake at 350 degrees for about 20 minutes. Slice the bread loaf into slices and serve with any Italian dish. Folks will love it and come back for more!

Years ago, when the Parker House in Boston was a place I would frequent, I found their offering of bread was often a delicious crispy wafer type bread seasoned with a dried tomato spread. I tested several of my own interpretations of this delicious bread. I finally found the right mix when I could use Lipton's coup of soup. Unfortunately, it is not easy to find now. Amazon seems to have an opportunity to purchase it through Knorr/Lipton. When I can't use it I find tomato paste (A FEW TABLESPOONS) worked easily as well. Do not buy Batchelor's brand of tomato cup of soup. It is very lacking.
