Homemade marinade ingredients
0.25 c fresh lime juice
2 T olive oil
1 T maple syrup or honey
1 tsp cayenne pepper
pinch of sea salt

Blackened seasoning ingredients
1 T sweet paprika
1 T raw sugar
2 tsp seasoned salt
1 tsp garlic powder
1 tsp onion powder
0.25 tsp ground cayenne pepper
2 tsp lemon pepper
0.25 tsp thyme
0.25 tsp oregano
0.25 tsp basil
0.25 tsp cumin

Maple lime glaze ingredients
2 T lime juice
2 T olive oil
1 T white wine vinegar
1 T maple syrup or honey
salt
pepper

4-6 mahi mahi fish fillets

Marinade prep
whisk 0.25 c fresh lime juice, 2 T olive oil, 1 T maple syrup, 0.25 tsp cayenne pepper and pinch of salt in mixing bowl
pour marinade into corning ware bowl with lid or corning ware dish. add mahi mahi fillets. cover with lid or saran wrap and refrigerate for 45 min to 1 hour.

blackened rub
ground fresh 0.25 tsps of cumin seeds, oregano, basil and thyme in spice grinder
transfer to small mixing bowl and add 1 T sweet Paprika, 1 T raw sugar, 2 tsp seasoned salt, 1 tsp garlic and onion powder, 0.25 ground cayenne pepper, 2 tsp lemon pepper
mix thoroughly
remove mahi mahi from refrigerator and dust rub with seasonings

Mix up the MapleLime glaze in small bowl
add 2 T lime juice, 1 T white wine vinegar, 1 T maple syrup or honey mix then add 2 T olive oil and pinch of salt and pepper

Grilling time 6 mins for mahi mahi fillets, grill 3 mins per side however turn 1/4 at 1.5 mins

brush with Maple Lime Glaze and Enjoy
