3 eggs
2 c. sugar
1 c. vegetable oil
2 c. grated raw zucchini
2 tsp. vanilla
3 c. all purpose flour
1 tsp. salt
1 tsp. baking powder
1 tsp. cinnamon
1 c. walnuts or raisins (optional)

Directions:
Directions:
beat eggs until light and foamy
Add sugar, oil, zucchini and vanilla. Mix lightly then beat well.
Combine the flour, salt, baking soda, baking powder, cinnamon, and then add to egg mixture. Add nuts.
Pour into 2 9x5x13 inch loaf pan and bake at 350ºF for 50-60 minutes
