3 Cups self-rising flour
2 Cups grated unpeeled zucchini
1 Cup chopped English walnuts
1 cup raisins
2 cups sugar
4 eggs
2 tsp. cinnamon
crushed pineapple(optional)
1 cup oil


Directions:
Directions:
Preheat oven to 350°. Grease and flour 2 loaf pans. In large bowl measure flour and cinnamon. In medium bowl, mix zucchini, walnuts and raisins, sugar, oil and eggs. To flour mixture add sugar, oil and eggs. Add zucchini mix. Mix until smooth. Pour batter into pans. Bake 50-60 minutes. Let cool in pans for a little while then serve.
