8 to 10 Larger bulbs of garlic

Preheat oven to 400. Peel any extra skin off garlic but do not separate bulbs. Trim the tip off. If there are any outer cloves that did not get trimmed, you may carefully lop off their tops too. It can be a bit difficult, but one at a time. Line a cookie sheet with a small piece of foil. Rip another sheet to wrap your garlic in. Spray it with cooking spray and arrange your cloves tightly. Drizzle olive oil over the open cloves, making sure with your finger tips to cover each clove. Seal the edges of the foil up like crab rangoon. Bake for 45 minutes. Check to see if the cloves are soft. If they are soft, but still very light, leave the foil open and turn the oven down to 350 for another 8 minutes or so. You don't want to burn it, just caramelize it a bit.
When they are done. Cool to room temperature. Squeeze cloves into a glass storage jar and cover with olive oil and about 1 tsp of good sea salt. Give it a nice stir. Make sure they stay covered. Never introduce water to the jar or bacteria will grow. Store in the refrigerator.
