1 lb. bacon
4 green onions, finely chopped
10 eggs
2 cups milk
1/2 tsp. salt
1/8 tsp. ground nutmeg
3 cups shredded Swiss or Cheddar cheese (I use Gruyere if its available)

Directions:
Directions:
Cut bacon into 1 inch pieces and cook until crisp. Saute onions in 2 tablespoons bacon drippings until tender. In a bowl, lightly beat eggs until blended. Stir in milk, salt and nutmeg. Reserve 1/4 cup each of bacon and cheese for the top; add remaining bacon and cheese to the egg mixture in shallow greased baking dish. Sprinkle reserved bacon and cheese on top.

Bake in a 9x9 inch or 9x13 inch pan.
Bake uncovered at 350º for at least 35-40 minutes or until knife inserted in center comes out clean.
Let stand for 10 minutes before serving.

Note: It usually takes longer the 40 minutes. You can pretty much tell when it is done when I is "set" in the middle.
