Ingredients: 2 whole eggs 1 cup sugar 1/2 cup brown sugar 1 Tablespoon cornmeal - leave out for GF 1 Tablespoon flour - leave out for GF Gluten Free -1 Tablespoon corn starch 1/4 cup milk 1 stick melted butter 1/2 teaspoon vinegar 1 Tablespoon vanilla
1 pie crust or for Gluten Free- 1/2 cup GF Bisquick
For Chocolate Chess Pie- Omit vinegar Add 2 Tablespoons Hershey's cocoa

Directions:Do not Preheat oven Mix all ingredients well and pour into an uncooked 9 " pie shell or for GF add 1/2 cup GF Bisquick. Bake at 325 for 1 hour
For Gluten Free (GF) Substitute 1 Tablespoon cornstarch for 1 Tablespoon cornmeal and the 1 Tablespoon flour. (Cornstarch has twice the thickening power of flour or cornmeal so only 1 Tablespoon is needed.)
For Chocolate Chess Pie- Omit vinegar Add 2 Tablespoons Hershey's cocoa
(Bisquick settles to the bottom of a pie making a light crust. You do not have to have a pie shell when you add Bisquick) |

Notes: Aunt Helen Scott gave me this recipe many years ago. It became one of the Hardin Family favorite pie recipes, especially Richard. When he was little he asked, "Why do people have to always have cake for their birthdays? I want pie?" When I asked him to name his favorite pie he said, "Chess!"
