6 ears freshly shucked corn
1 green pepper, diced
2 Roma tomatoes, diced
1/4 C. red onion, diced
1/2 bunch cilantro, chopped
2 tsp. olive oil
Garlic powder to taste
Salt to taste
Pepper to taste

Directions:
Directions:
Cook corn on grill that has been lightly oiled, turning occasionally until corn is tender and specks of black appear, about 10 minutes. Set aside until just cool enough to handle. slice the kernels off of the cob and place in a bowl. combine the warm corn kernels with the rest of the ingredients. Toss until evenly mixed. Serve warm or cold. Can be refrigerated for several days.
