- 1 cup Stove Top Stuffing mix
- 1 tbsp butter
- Salt & pepper to taste
- ½ package ground beef
- 1 egg
- Italian breadcrumbs (1 cup or less)

Directions:
Directions:
Prepare 1 cup Stove Top Stuffing according to the directions on the package and let cool.
Combine ground beef (approx. ½ a standard size package, enough to make 1 meatloaf) with egg and salt & pepper (to taste, about 1 tsp. each) and begin mixing by hand. Add breadcrumbs liberally to soak up most of the moisture, until consistency feels right.
Roll out mixture flat & cover with a layer of cooled stuffing.
Begin to roll & shape into a loaf, making sure all the stuffing is contained inside the meatloaf. Bake at 350ºF for 45 minutes (preferably in a pan on top of a roasting rack, to drain fat).
