3 1/4 cups all purpose flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

2 cups sugar

1 1/2 cups butter, softened

1/2 cup solid vegetable shortening

1 tsp vanilla extract

1 tsp liquid coconut flavor

1 cup shredded coconut

powder sugar; icing sugar

Preheat oven 350º

In a medium bowl, stir flour, baking soda, baking powder and salt; set aside.

In a large mixer bowl at medium speed, beat sugar, butter, shortening, vanilla and coconut flavour until light and fluffy. at low speed, beat in flour mixture, then coconut until blended. Shape into 3/4 inch balls using about 1 tsp dough at a time.

Place 2 inches apart on ungreased baking sheets.

Bake 11 to 13 mins. or until golden and tops are set. Cool cookies on wire racks for 5 mins. Dust with icing sugar. Cool completely.

Place cookies in a container with waxed paper between layers.

Store in a airtight container in a cool place.

I found making the balls tricky at times and I know I said The Lord's Prayer many times. Sometimes came perfect and next time could not do a thing right
