2 (3.5 ounce) packages microwave popcorn, popped

1 cup margarine

1 1/2 cups brown sugar

3/4 cup crunchy or smooth peanut butter

40 large marshmallows

Directions:
Directions:
Spray 2 large aluminum pans (like turkey roasting pan size) with non-stick spray and set in oven at 200 ºF. Spray a glass bowl with non-stick spray, combine the margarine, brown sugar and marshmallows. Cook at 1 minute intervals in the microwave, stirring between each time, until the mixture is melted and smooth. QUICKLY stir in the peanut butter until well blended. QUICKLY take pan out of oven, add popcorn and pour the melted mixture over the popcorn, cover with foil and shake to evenly coat the popcorn.

Bake at 200 ºF for about 20 minutes, shake pan about every 5 minutes. Let cool.


Tip: Also spray the foil with non-stick spray!

This popcorn makes a great Christmas gift and it is super easy to make. You can substitute the marshmallows for Karo syrup for a crunchier recipe.
