4 to 5 lbs. Pork Shoulder
1 Whole white onion, quartered with root removed
1 Tbsp. Chili Powder
1 tsp. Crushed Red Pepper
1/2 cup Brown Sugar
4 cloves garlic
1 teaspoon dried oregano
2 teaspoons ground cumin
1 to 2 tbsp. kosher salt to taste
Freshly ground black pepper
3 Tbsp. Olive Oil
2 Tbsp. White wine vinegar
Lime wedges
Flour Tortillas

Directions:
Directions:
1. Preheat oven to 300 degrees.

2. In a food processor, combine onion, chili powder, brown sugar, garlic, oregano, cumin, crushed red pepper, salt, pepper, olive oil and white wine vinegar.

3. Place meat in a dutch oven and pour mixture over it. Rub mixture into the meat, tucking it under folds and in crevices.

4. Add 2 cups of water to the dutch oven on the sides of the meat. (Don't pour water over the meat and rinse off the seasoning).

5. Cover tightly and roast in the oven for 6-8 hours. Turn the meat every 2-3 hours. Check to make sure the meat is fork-tender and pulls apart easily. If the meat is not fork tender, keep roasting it until it is.

6. Once the meat is tender, increase the oven temperature to 425 degrees and roast uncovered, skin side up for 20 minutes or until outside is a little crispy.

7. Remove from the oven and allow the pork to rest for 15 minutes. Shred the meat with two forks. You can add any juices left in the pan to the meat or throw the meat back into the dutch oven to mix with the juices.

8. Warm the tortillas and serve with lime wedges.
