1/2 Cup uncooked Quinoa
2 large eggs
2 tsp. olive oil
1/2 tsp. cumin
1/2 tsp. salt
1 ripe avocado halved and pitted
1/4 tp, pepper
3 Tbsp. whole-milk plain greek yogurt
2 lemon wedged
1Tbsp. olive oil
2/3 cup grape tomatoes
2 cups torn kale
2 Tbsp thinly sliced shallots

- cook quinoa as directed on package
-hard boil eggs
- heat oil in small skillet over medium heat. Add cumin, cook 30 seconds add quinoa and 1/4 tsp salt, cook 2 minutes or until lightly toasted.
- place 2/3 cup of quinoa mixture in each bowl
- cut each egg in half and lay in bowl
- add one avocado half to each bowl
- season with salt and pepper
-heat oil in cast-iron skillet over medium heat. Add tomatoes and cook 2 minutes stirring once or twice untilled blistered in spots.
- remove tomatoes from pan add kale and shallots cook 3 minutes shirring occasionally
- add to quinoa bowl
- add a lemon wedge to bowl, squeeze over bowl before eating
