1 lb approximate) pork loin
2 apples cored and cut into chunks
2 sweet onions cut into chunks
2 T olive oil
Garlic powder
Garlic salt
Black pepper
Sazon Goya - Con Azafran (with Safron)
Brown sugar
2 cups yellow rice - I use partially cooked rice for quickness

Directions:
Directions:
Preheat oven to 350º F.
Cook rice adding 1 packet of Sazon, and a pinch of salt.
Lubricate a cookie sheet with olive oil.
Slice the pork loin into medallions approximately 1 inch chunks.
Cut the cored apples into chunks.
Cut onions into chunks.
Spread pork, apples, onions onto the lubricated cookie sheet.
Randomly arrange the ingredients onto the greased cookie sheet.
Season all ingredients with garlic powder, garlic salt, black pepper, and brown sugar.
Roast in the preheated oven for approximately 45 minutes, turning the pork after about 20 minutes.
Serve over a bed of yellow rice.
