6 ounces whole-wheat flour (about 1 1/2 C)
1/4 C wheat bran (we used bulgur)
1 tsp baking powder
1 tsp baking soda
1/2 tsp kosher salt
2 Tbsp unsalted butter
1 C plain low-fat yogurt
1/2 C packed brown sugar
1 tsp vanilla extract
1 medium ripe banana ( is that medium ripe or medium size? you decide)
1 large egg

1. preheat oven to 375º
2. weigh or lightly spoon flour into doing measuring cup; level with a knife. Combine flour, wheat bran, and next 3 ingredients (though salt) in a large bowl, stirring with a whisk.
3. Melt butter in a small skillet over medium heat; cook 90 seconds or until browned and fragrant, swirling in pan frequently. Combine butter, yogurt, sugar, vanilla, banana and egg in a bowl. Add yogurt mixture to flour mixture, stirring just until combined. Divide bater evenly among 12 muffins cups coated with cooking spray. Bake at 375º for 22 minutes or until wooden pick inserted in center comes out clean. Cool in pan for 5 minutes. Remove from pan and cool completely on wire rack.

You can mix it up with:
1. cherry-gingerbread - add 1/2 C chopped dried cherries, 1/3 C molasses, 1 tsp ground cinnamon, 1 tsp ground ginger, and 1/4 tsp ground allspice to muffin batter.

2 Figgy walnut - add 3/4 C sliced dried figs, 1/2 C coarsely chopped walnuts, and 1 tsp ground cinnamon.

3. Cranberry, orange and pistachio - add 1/2 C dried cranberries, 1/2 C chopped unsalted pistachios, 1 1/2 tsp grated orange rind and 1/4 C fresh orange juice.

We did this for our Sunday Home Church group with the cranberry, orange, pistachio and they loved it. These are very good.
