1 can (8 3/4oz crushed pineapple)
3 eggs
1 1/2c oil
2t vanilla
3c sifted cake flour
2c sugar
2t baking soda
2t cinnamon
1 1/2t salt
1t baking powder
2c grated carrots
1 1/2c chopped pecans

Cream Cheese Frosting
1 package (3oz) cream cheese (softened)
2T margarine (softened)
1T vanilla
1t orange juice
1/8t cinnamon
1 1/4c sifted powdered sugar

Directions:
Directions:
Drain pineapple well. To the pineapple juice add eggs, oil vanilla. Beat until mixed. Add dry ingredients; beat at medium speed 3 minutes. Stir in pineapple, carrots and nuts. Pour into greased and floured 10 inch bundt pan. Bake at 325ºF until done about 1 1/2hrs. Cool in pan on wire rack 30 minutes. Remove from pan; cool completely. Spoon well-blended creamy frosting over cake sprinkle with nuts if desired.
