3c mashed sweet potatoes cold (without added milk or butter)
1/2c sugar
1/2c margarine (melted)
2 eggs beaten
1/3c milk
1t vanilla
1/2c coconut

topping
1/2c packed brown sugar
1/2c chopped pecans
2T margarine (melted)
1/4c flour

Directions:
Directions:
In bowl beat potatoes, sugar, butter, eggs, milk and vanilla until fluffy. Stir in coconut. Spoon into a greased 2 1/2qt baking dish.

Combine topping ingredients until well blended; sprinkle over sweet potatoes. Bake, uncovered at 350ºF for 35-40 minutes or until golden brown
