1 egg
½ cup sour cream
1 pkg 8.5 oz corn muffin mix
½ cup shredded cheddar cheese
1¼ cup shredded rotisserie chicken
½ cup BBQ sauce



Directions:
Directions:
Heat oven to 400º. Mix beaten egg and sour cream in medium bowl until blended. Add muffin mix and cheese; mix just until blended. Spoon into muffin pan sprayed with cooking spray. Bake 10-12 min until done. Cool 5 min. Remove muffins from pan to wire racks; cool completely. Use knife to cut off the tops of the muffins and scoop out centers. Toss chicken with BBQ sauce in microwaveable bowl. Microwave 1-2 min or until heated through; spoon into muffins and serve.
