1-2 lbs Chicken Breast, boneless & skinless
1/2 tps Salt
1/2 tsp Pepper
2 c All Purpose Flour
2 Eggs
2 c Seasoned Bread Crumbs
1 Box Lasagna Noodles, cooked and drained
Mozzarella Cheese
2 jars of Marinara Sauce
Shredded Cheese
Chopped Parsley

Directions:
Directions:
Lightly season the chicken and slice it into strips about 1/2" thick. Dredge each piece in flour, then egg and finally bread crumbs. Quickly fry strips in 1/2" of oil over medium heat. Cook for about 30 seconds each side to color the breading. Drain and set aside.

Assembly:
Take 1 noodle and lay it out flat. Spread a spoonful of sauce on one end, sauce and cheese on the other end. Place a piece of chicken on the cheese and then carefully roll the chicken/cheese/sauce end towards the sauce only end. Place the roll in a non-stick casserole dish. Finish wrapping all the chicken in the saucy/cheese noodles.

Pour the rest of the sauce over the rolls and top with more cheese.

Bake for 20 minutes at 350 F.

This takes a little effort, but the rolls get easier with each repetition. Be careful with the cooked noodles. If you overcook them, they will tear when you strain them, making them hard to use as a roll up.
