For Lemon Curd:
1 c. Freshly Squeezed Lemon Juice
4 tsp. Lemon Zest
1 c. Sugar
6 Eggs
12 T. Grassfed Butter, cubed

For Cocktail:
1.5 oz. Hendrick's Gin or Opihr Gin
1 oz. St. Germaine
2 T. Lemon Curd
1 oz. Egg Whites
1/2 Lemon, Squeezed

For Lemon Curd:

1. Whisk first 4 ingredients together over heat in a saucepan.

2. Add diced butter.

3. Whisk continuously until thick and bubbles are surfacing.

4. Cool completely and store in an airtight container. The Lemon Curd stores well in the freezer, or keep in the fridge for up to 14 days.


For Cocktail:

1. Add ingredients to shaker.

2. Shake for 15 seconds then add ice to shaker (1/3 full). Continue shaking until the shaker tin is frosty cold.

3. Strain through a fine colander into a collins glass with ice. Add a dash of soda water to shaker, swirl and strain over the cocktail and garnish with lemon zest.
